There is an old saying in the wine world that great wine is made in the vineyard, not the cellar, and behind that saying lies an even older truth: the vineyard is made by the weather. No agricultural product is more transparently a record of a single year's weather than wine. The concept of the vintage — the idea that wine from one year differs meaningfully from the next — exists precisely because each growing season writes its particular weather into the grapes and, ultimately, into the glass. Understanding how the weather shapes a wine is a wonderful way to appreciate both the drink and the forces that govern the growing of anything.

The vine's year begins nervously, in spring, with one of the great weather threats: frost. As the weather warms and the vine breaks dormancy, it pushes out tender green buds, and those young shoots are acutely vulnerable to freezing. A single hard frost after budburst can destroy a season's growth in a night, killing the shoots that would have borne that year's crop. This is why you see, in famous wine regions, growers lighting candles and braziers among the vines on frosty spring nights, or running great wind machines and even spraying the vines with water, whose freezing releases just enough heat to protect the buds. The frost threat is at its worst exactly in those low-lying frost pockets where cold air pools, which is one reason many of the best vineyards sit on slopes, where cold air drains away downhill instead of settling.

Through the growing season, the vine's great need is warmth and sunshine, but in balance. Grapes ripen by accumulating sugar through photosynthesis, and that requires heat and light across the summer and into autumn. Too little warmth and the grapes never fully ripen, staying sour, thin and green-tasting; the wine will be lean and sharp. Too much relentless heat, and the grapes can ripen too fast, piling up sugar before their flavours and acids have developed, or even shutting down and shrivelling in extreme heat waves; the resulting wine can be flabby, overly alcoholic and lacking freshness. The ideal is a long, warm, sunny season that lets the grapes ripen slowly and fully, developing sugar, flavour and aroma in balance while retaining enough natural acidity to keep the wine lively. This is why the classic wine regions cluster in temperate bands where the summers are warm but not brutal and the season is long.

The daily rhythm matters as much as the seasonal average, and here one weather feature is prized above almost all others: the swing between warm days and cool nights. Grapes build sugar and flavour in the warmth of the day, but they preserve their acidity in the cool of the night, when the vine's metabolism slows and less acid is respired away. A large day-to-night temperature difference — the kind you get at altitude, or in continental climates, or where cool sea or mountain air arrives each evening — gives wines both ripeness and freshness, the balance that marks out fine wine. Regions famous for elegant, aromatic wines very often owe that character to cool nights that the daytime warmth alone would never suggest.

Then comes the season's tensest moment: harvest, and its great enemy, rain. As the grapes approach ripeness in autumn, the grower is watching the forecast with an intensity that would be familiar to any farmer bringing in a crop, because rain at harvest can undo an entire year's work. Heavy rain just before picking swells the grapes with water, diluting the concentrated sugars and flavours the whole season was spent building. Worse, warm, wet, humid conditions invite rot to spread through the ripe bunches, which can force a grower to pick early, before full ripeness, or lose the crop. So the harvest decision becomes a bet, exactly like the haymaker's bet on a dry window: pick now at slightly less than perfect ripeness with settled weather, or gamble on a few more days of ripening and risk a forecast band of rain. Great vintages are often those blessed with a dry, sunny autumn that let the grower wait for perfect ripeness; difficult vintages are frequently those where autumn rain forced a hard choice.

There is a fascinating wrinkle in which certain humid conditions are not a curse but the making of a wine. Some of the world's greatest sweet wines depend on a particular mould, noble rot, which develops when misty, humid mornings are followed by dry, sunny afternoons. The mould shrivels the grapes and concentrates their sugars into something extraordinary — but the exact same fungus in the wrong conditions is simply grey rot, a disaster. The line between the two is drawn entirely by the weather, a vivid illustration of how the same phenomenon can be salvation or ruin depending on the pattern of the days.

All of this is why wine lovers talk so much about vintages and why the character of a region's wine is really the character of its climate, distilled. A cool region in a warm year, a warm region in a cool year, a dry autumn or a wet one — each writes itself into the wine. Next time you drink a wine with a year on the label, remember that you are, in a real sense, tasting the weather of that place in that season: the spring frosts survived, the summer sun accumulated, the cool nights that kept it fresh and the autumn that either blessed the harvest or tested it. Few things connect the sky to the table quite so directly.
